Peach Yaupon Iced Tea
Serves 8 | Prep 10 minutes | Chill 1 hour
Refreshing any time of year, but especially when fresh peaches are at their peak of ripeness.
6 Habitat Yaupon Medium Roast tea bags
2 ripe peaches, pitted and sliced (or substitute defrosted frozen sliced peaches)
1 sprig fresh mint, leaves bruised
Ice
Fresh mint leaves for garnish
Bring 4 cups of filtered water to a boil in a medium saucepan. Remove from heat, add the tea bags, cover, and let steep for 7 to 10 minutes. Remove the yaupon tea bags (reserve for a later use, if desired). Add 8 cups filtered water, the peaches, and the mint sprig. Cover and chill for 1 to 2 hours.
Remove the mint and peach slices. Fill tall glasses with ice, then add the tea. Garnish with a fresh mint leaf and serve.
